09 May Big Fish Market: Prepare Fresh Fish at Home

Then follow these go-to tips from our culinary director that will leave your family raving over what’s served up tonight.
Steak fish is always the best for grilling because it’s hearty and will hold up well during cooking. Try swordfish or tuna for the novice griller, or rockfish, mahi or salmon if you’re more comfortable grilling fish. You’ll want to marinate or lightly season the fish prior to grilling. Pick up our steak spice, a Big Fish original, or blackening season for a deeper, earthy flavor. You can also keep the seasoning simple and drizzle Lobster Sauce over your fish to finish it. Try our Hawaiian BBQ Sauce if you prefer a marinade.
Set your grill to 400 degrees and use nonstick spray on both the grill and the fish. To prepare your fish to medium well, which is how we do it in house, start by cooking it skin side up (so the meat of the fish is on the grill) for 2/3 of the cooking time. Rotate the fish a bit for the last 1/3, and then turn it over (so the skin side is now on the grill) for the last 2-3 minutes to finish grilling.
If you prefer a more delicate fish, such as flounder, cod or tilapia, we recommend baking it. Coat your fish with one of the mouthwatering crusts we use in our restaurants and carry here at the Market before putting it in the oven. The cashew or pecan crust are both delicious when topped with the fruit salsa made fresh here daily. Set your oven to 400 degrees and bake the fish for 9-12 minutes. Cooking times will vary depending on the thickness of your filet.
